Healthy pumpkin muffins

Today we are making healthy pumpkin muffins. The autumnal weather is in full swing, so we are going to bake again on this Sunday baking day. Today we are going to bake with pumpkin! This autumn vegetable is deliciously full of flavor, which makes it perfect to use in baking. These healthy pumpkin muffins are very easy to make, super creamy and hearty in flavor. I am sure they will be enjoyed by young and old alike. There are no added sugars or butter in the batter besides the agave syrup, but I sprinkle a tiny bit of caster sugar on the top before they go in the oven, so you get a really nice caramelized layer on top of your muffins. Baking with vegetables

Baking with vegetables is a great way to get extra nutrients while making delicious, nutritious baked goods. What you need:

100 gr pumpkin puree 
2 eggs
1 tbsp. honey
200 gr oat flour
50 ml of milk
1 tsp baking powder
1 tsp cinnamon or pumpkin spice
1 tsp vanilla extract
sea salt
optional: pinch of brown caster sugar
+/- 6 pieces

What to do:

Preheat the oven to 180 degrees and place muffin tins in a muffin tin.

Sift the oat flour and place in a bowl along with the cinnamon, baking powder and a pinch of salt and mix well. Then add the milk, eggs, pumpkin puree, vanilla flavoring and agave syrup and mix together. Is the batter still too thick? Then add extra milk if necessary!

Divide the batter among the muffin tins and tap the bottom of the mold on the counter for a moment to remove all the air bubbles.

Sprinkle a very small amount of dark caster sugar over each muffin and slide into the oven for 15 minutes. Let the muffins cool briefly before removing them from the mold.
