It's time again for a tasty snack: healthy mango crumble bars! I bake a healthy snack every week that I can then snack on throughout the week. Besides banana, mango is my favorite fruit. So it was high time to make something delicious with it. You can do anything with mango. Before, I also made this veggie burger with mustard-mango sauce and this sticky eggplant with spicy mango salsa. And for dessert, you could go for this strawberry-mango sorbet can go.

Mango and oatmeal

Did you know that you can use mangoes very well in baked goods? Mango can be a delicious addition to pastries and desserts because of its sweet and juicy flavor and soft texture. When mangoes are baked, the sugars in the fruit can caramelize, creating a rich, deep flavor. In addition, baking mangoes can make the fruit softer and juicier, making it a great choice for cakes, muffins, breads and other pastries. Mangoes are also rich in vitamins and nutrients, so it can be a healthy and tasty addition.

In addition to mango, I also use oatmeal in this baking. With that, you make the crumble. Oatmeal is a popular ingredient to bake with because of its many benefits. First, oatmeal is rich in fiber, which can help promote digestion and increase feelings of satiety. This, in turn, can help control blood sugar and reduce appetite. Oatmeal is sincerely filling, which is why I always have breakfast with it. You can find my favorite oatmeal here.

In addition, oatmeal is a good source of complex carbohydrates, which means it takes longer to digest and be absorbed into the body. This can help keep energy steady for longer periods of time and promote a sense of satiety. Oatmeal can also serve as a healthier alternative to refined white flour in baking recipes. By using oatmeal instead of flour, you can increase the fiber and nutrient content of your baking. Moreover, oatmeal has a mild, nutty flavor that goes well with many baking recipes.

Therefore, these healthy mango crumble bars are heart-healthy and what's more, they taste great. These bars are also completely vegan. What are you waiting for? Get started!

What you need:

For the bars
150 gr spelt flour
350 gr mango
diced
50 ml (unsweetened) milk
1 tsp baking powder
50 ml coconut oil
2 tbsp. honey or agave syrup
1 tsp almond aroma
pinch of sea salt
For the crumble
125 gr oatmeal
85 gr spelt flour
4 tbsp. honey agave syrup
pinch of salt
9 servings

What to do:

1

Preheat the oven to 180 degrees and line a square (20×20) baking pan with baking paper or grease it.

2

We start with the bottom. Mix 150 gr of spelt flour with the baking powder and a pinch of salt. Then add the coconut oil, almond flavoring, milk and 2 tbsp of honey. Mix and knead into a ball of dough. Spread the dough over the bottom of the baking dish. Use a flat utensil to spread evenly over the bottom.

3

Next, spread the mango cubes over the bottom.

4

For the crumble, mix the crumble ingredients together and with your hands knead it so that it becomes crumbly. Does it remain too dry? Then add extra honey.

5

Spread the crumble over the mango and slide into the oven for 30 minutes. If the crumble gets too brown on top, cover with aluminum foil halfway through. Let cool briefly before cutting the crumble.
