Now you may be thinking, why a healthy mango coconut cake? I personally find it super chill to take snacks to the office or on the go. I really eat all day and I like to have a healthy snack with me, but one that tastes great and is filling. This healthy mango-coconut cake has a base of almond flour and oat flour, so there is a lot of fiber in the cake. This makes the cake very filling. In addition, I use natural sweeteners, such as applesauce. The cake also contains a lot of protein thanks to the eggs, flours and yogurt. And no, of course this cake does not taste as ant-sweet as a slice of farmers' cake from the supermarket. But is that really what you're looking for? The cake is deliciously fresh with a soft texture. You can freeze the cake in slices or store it in the refrigerator for at least 5 days. Use your senses. What you need:

For the cake
205 gr almond flour
100 gr oat flour
125 gr low-fat yogurt
100 ml coconut milk
30 gr grated coconut 
3 eggs
260 gr fresh mango 
100 gr unsweetened applesauce
1 tsp almond extract
1 tsp baking powder
1 tsp baking soda
pinch of salt
For the topping
3 tbsp yogurt or cottage cheese
few diagonal slices of fresh mango
2 tbsp coconut rind 
fresh mint
1 cake

What to do:

Preheat the oven to 180 degrees and line a cake pan with baking paper or grease it.

Place the coconut milk along with the mango, yogurt, applesauce, eggs and almond extract in the blender. Blend briefly until smooth.

Mix the almond flour with the oat flour, baking powder, baking soda, coconut zest and a pinch of salt. Then carefully spoon in the mango mixture until you get an airy batter.

Pour the batter into the cake pan and bake the cake in the oven for 50 minutes. When the cake gets too dark on top, cover it with aluminum foil and continue baking. Then let the cake cool completely in the cake tin before adding the toppings.

Remove the cake from the mold. Spread the top of the cake with the yogurt or cottage cheese. Cut the mango into thin strips and place on top as well. Top with extra coconut zest and fresh mint.
