How can you bake healthily?

This healthy lemon cake is one of my many healthy bakes. When you think of bakes, cakes and pies you often think of unhealthy things anyway, but did you know that healthy baking doesn't have to be difficult at all! Here are some reasons why healthy baking can be easy:

  1. Use healthy ingredients: in healthy baking, you can choose healthier ingredients such as whole wheat flour, oatmeal, nuts, seeds, fresh fruits and vegetables, Greek yogurt, honey or maple syrup as natural sweeteners and healthy fats such as avocado or coconut oil also do well in baking. These ingredients can give a nutritious boost to your baking without compromising the taste.
  2. Replace unhealthy ingredients: many traditional baking recipes often contain large amounts of sugar, butter or white flour, which are less healthy. Fortunately, you can often easily replace these ingredients with healthier options. For example: you can reduce sugar or replace it with natural sweeteners, such as stevia, honey or maple syrup. Butter can be replaced with healthier fats, such as unsweetened applesauce, Greek yogurt or avocado. White flour can be replaced with oat flour or almond flour for more fiber and nutrients.
  3. Adding nutritious ingredients: healthy baking also offers the opportunity to add nutritious ingredients to your baking. Consider adding fresh fruits and vegetables, such as berries, apples, carrots, zucchini, or squash, for extra vitamins, minerals, and fiber. You can also add nuts, seeds, and dried fruit for extra nutritional value and texture. By adding these ingredients, you can increase the nutritional value of your baking without compromising on taste.
  4. Experiment with recipes: healthy baking offers lots of room for creativity and experimentation. You can adapt existing recipes and use healthier ingredients to create your own healthy baking recipes. Try different combinations of healthy ingredients and adjust the proportions to achieve the desired taste and texture.
  5. Enjoy taste and nutritional value: healthy baking doesn't mean you have to sacrifice taste. In fact, healthy baked goods can taste delicious while providing you with nutrients that are good for your body. By consciously using healthier ingredients and enjoying the taste and nutritional value of healthy bakes, you can strike a balance between delicious and healthy.

What you need:

For the cake
225 gr almond flour
55 gr oat flour
200 gr yogurt
50 ml of milk
3 eggs
2 lemons
100 gr applesauce
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
pinch of salt
For the topping
3 tbsp yogurt or cottage cheese
slices of lemon
1 cake

What to do:

1

Preheat the oven to 180 degrees and grease a cake pan or line it with baking paper.

2

Put the applesauce together with the eggs, milk, yogurt and vanilla extract in a bowl and mix with a whisk. In a separate bowl mix the baking soda with a few drops of lemon juice.

3

Put the almond flour along with the oat flour, baking powder and salt in a bowl and mix as well. Then add the wet ingredients and baking soda to the dry and mix gently with a spatula.

4

Squeeze both halves of 1 lemon over the batter and then grate the zest over it as well. Mix everything again with a spatula. Is the batter still too dry? Then add some extra milk.

5

Pour the batter into the cake pan and slide into the oven for 45 minutes. Keep a close eye on it. If the top gets too brown, cover it with aluminum foil and continue baking.

6

Let the healthy lemon cake cool completely before cutting it. Garnish with the cottage cheese/yogurt and lemon slices.
