Healthy chocolate cake with speculoos I want to eat every day. I love cake! I bake a banana bread, cake or pie almost every weekend, so I always have a nice snack for work. You can easily make a cake in a healthier way, without adding a lot of butter or sugar. This time I went for a delicious chocolate cake with a frosting of cottage cheese and speculoos crumbs. What you need:

230 gr spelt flour
100 gr self-rising baking flour
3 eggs
200 ml (vegetable and unsweetened) milk
150 gr unsweetened applesauce
1 tsp baking powder
25 gr cocoa
1 tbsp. speculoos paste
vanilla essence
1 tbsp agave syrup or honey
pinch of salt
For the topping
100 gr low-fat cottage cheese
1 tbsp cocoa
2 speculoos cookies
1 cake

What to do:

Preheat the oven to 180 degrees and line a cake pan with baking paper (or grease it).

Mix the spelt flour with the self-rising baking flour, baking powder, cocoa and salt. Melt the speculoos paste in the microwave and add along with the applesauce, eggs, milk and vanilla essence. mix well.

Pour the cake batter into the cake pan. Tap the tin on the countertop for a moment to get all the air bubbles out.

Slide the cake into the oven for 25-30 minutes. Check with a skewer to see if it is done. Let the cake cool completely before cutting it.

You make the frosting by mixing the cottage cheese with the cocoa and crumbling the cookies. Spread the frosting on the (cooled) cake and sprinkle with the cookie crumbs.
