Preheat the oven to 180 degrees and line a cake pan with baking paper (or grease it).
Mix the spelt flour with the self-rising baking flour, baking powder, specula cheese spice and salt. In another bowl, mix the applesauce, eggs, milk and vanilla essence.
Add the wet ingredients to the dry and mix gently spatula. Add the carrot and raisins as well. Mix again.
Pour the cake batter into the cake pan. Gently tap the tin on the countertop so that all air bubbles are out.
Slide the cake into the oven for 35-40 minutes. If it gets too dark on top, you can cover it halfway through with aluminum foil in the oven. Let the cake cool completely before cutting it.
Make the frosting by mixing the dairy spread with the powdered sugar and water. Spread the frosting on the (cooled) cake.
