Cruffins with raspberries

What are cruffins?

A cruffin is a type of sandwich or delicious pastry that combines the features of a croissant and a muffin. The word "cruffin" is actually an amalgamation of "croissant" and "muffin." Joh!

They are made from croissant dough baked in a muffin tin, giving them the shape of a muffin. The dough is rolled into the mold, usually with additions such as sugar, cinnamon, chocolate, nuts or other flavorings. I went for raspberry jam and almonds. After baking, cruffins often have a crispy outside, similar to a croissant, and a soft, fluffy inside, typical of a muffin.

Cruffins have become popular for their unique combination of textures and flavors and are available in various bakeries and cafes around the world. Almost every coffee shop has them on the menu!

Cruffins with raspberries

These cruffins are very tasty to serve at Christmas breakfast or brunch, for example. They are very easy to make and you only need a few ingredients. Moreover, you can vary endlessly with fillings. You could even make a savory version, for example these cruffins with cheese.

What you need:

1 roll of croissant dough
6 tbsp. raspberry jam
3 tbsp almond shavings
3 tbsp. powdered sugar
Fresh raspberries for garnish

8 pieces

What to do:

Preheat the oven to 180 degrees and grease a muffin pan (preferably a sillicone baking pan).

Roll out the croissant dough on the countertop, pressing the edges closed if necessary if there are edges (so that you get a large rectangle).

Spread the rectangle with the raspberry jam and roll it up lengthwise. Cut into 8 pieces and place each piece inside up in a muffin tin. Sprinkle the cruffins with some almond shavings and slide them into the oven for 20 minutes.

After 20 minutes, check that they are cooked thoroughly and let the cruffins cool on a wire rack.

Mix the powdered sugar with a tablespoon of water and drizzle the frosting over the muffins. Garnish with some fresh raspberries, if desired.
