Today we are making creamy carrot soup! Soup season is far from over. I actually don't share recipes for soup very often at all and that's such a shame. This creamy carrot soup is all you need! Soup is super delicious, easy and just perfect comfort food on a cold evening. You can easily use leftover vegetables in it and with such a rich soup you get a lot of good nutrients. With soup you can vary endlessly with all kinds of vegetables and herbs you can think of. Tasty right?

Creamy carrot soup

This creamy carrot soup with za'atar, among other ingredients, is packed with texture and flavor. I personally like very thick soups, almost like a puree. You don't like that or find this one too thick? Then you can always add extra broth or water, so it gets the desired thickness for you. I also like to go loose with lots of toppings with different textures. This time I chose parsley, chili flakes, za'atar and pieces of cashew nut, among other things. Delicious. What you need:

4 winter carrots
handful of cherry tomatoes
2 shallots
2 cloves of garlic
200 ml coconut milk
400 ml of vegetable broth
handful of cashew nuts
1 tsp za'atar
chili flakes to taste
fresh parsley
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Clean the carrots and cut into coarse pieces. Chop the shallot and remove the skin of the garlic. Halve the cherry tomatoes. Place everything on the baking sheet and drizzle with olive oil, salt and pepper. Massage in with your hands and slide into the oven for 20 minutes.

Meanwhile, heat the broth.

Scoop all the vegetables into the blender along with the coconut milk (keep 2 tbsp for garnish), broth and 1 tsp chili flakes and blend to a thick soup. Season to taste with salt and pepper.

Garnish the soup with the coconut milk, parsley, chili flakes, za'atar and cashews.
