What you need:

250 ml of whipped cream
250 gr mascarpone
50 g powdered sugar
200 g raspberries
12 ladyfingers
+ 3 for garnish
200 ml sparkling wine
1 lime

What to do:

Whip the heavy cream with the powdered sugar until stiff, then add the mascarpone. Mix well.

Mash about 3/4 of the raspberries with a fork. Make sure you have 2 raspberries per person left for garnish. Mix the mashed raspberries into the whipped cream and mascarpone mixture. Then put this mixture into a piping bag (or use a ziplock bag or sandwich bag with the corner cut off).

Put the cava and lime juice in a deep bowl or plate. Dip the ladyfingers in one by one. Don't use the ladyfingers for garnishing; keep them dry!

After dipping the ladyfingers in the champagne, cut them in half and start making the tiramisu. Begin with two halves of the ladyfingers followed by a layer of the whipped cream mixture. Repeat this once more. Top it off with some (halved) raspberries and stick half a ladyfinger in it for garnish. Repeat until all ingredients are used up.
