Vegetarian chicken curry with green beans

Vegetarian chicken curry with green beans is a delicious variation on the familiar chicken curry. In the winter I love nothing more than cooking! Especially on cold and rainy days, I spend all my time behind the stove. Warm and spicy dishes bring much enjoyment to the dinner table every evening. This vegetarian chicken curry is a real winner! It's ready within half an hour and so incredibly flavorful! Serve it with rice or noodles.

Variation

You can vary endlessly with the vegetables with this vegetarian chicken curry. I went for green beans, but you can replace them with broccoli, cauliflower, zucchini or leeks, for example. Would you rather try a different curry? This vegetarian curry with eggplant and meatballs is also fantastic and just as tasty.

What you need:

300 gr veggie chicken
500 gr green beans
400 ml coconut milk
400 ml of vegetable stock
(= 400 ml water + 1 bouillon cube)
1 red pepper
1 tbsp cornstarch
1 white onion
1 clove of garlic
2 tbsp curry powder
1 tbsp turmeric
few stalks of spring onion
sesame seeds
salt and pepper
olive oil
optional: fresh cilantro or parsley
suggestion: rice or noodles as a side dish

What to do:

Bring a pan of water to a boil. Clean the green beans and cook for about 7 minutes al dente.

Chop the onion. Chop half of the red pepper. Heat some oil in a pan and fry the onion. Then add the veggie chicken and half the red pepper and fry briefly. Season to taste with salt and pepper.

Chop the garlic finely. Now add the curry powder, garlic, turmeric, coconut milk and broth to the pan. Stir well and bring to a boil. Then turn down the heat to low and simmer gently for 10 minutes. Mix the cornstarch with a little water in a glass and add to the dish along with some salt and pepper and the green beans. Stir well and allow the sauce to thicken a little more.

Meanwhile, slice the spring onion and the other half of the red pepper into rings. Also finely chop the parsley or cilantro.

Serve the vegetarian chicken curry stew with the spring onion, extra red pepper, sesame seeds and fresh herbs.
