You usually start with some meat, fish or meat substitute/ pulses and add vegetables, such as bell peppers, onions, carrots or whatever you like. Then you season everything with spices, salt, pepper and some oil to make it flavorful.
The tray then goes into the oven and while it bakes there, the flavors mix and everything gets cooked. The result is a delicious and easy-to-prepare meal with little dishes. Moreover, it is also hearty and nutritious. Ideal!

This traybake with falafel consists of lots of delicious ingredients. I used potatoes as a base and to that I added zucchini and eggplant. I chose falafel as my protein source. This went into the oven with some herbs and olive oil and in the meantime I made a yogurt sauce to serve the traybake with. Top it all off with some pine nuts and fresh herbs and you have a fantastic meal. If you don't have time or don't feel like making your own sauce, you can also just use a ready-made sauce or dressing of your choice. A honey mustard sauce or garlic sauce would also taste really good with this.
Preheat the oven to 180 degrees and line a baking sheet with baking paper.
Slice the eggplant and cut stripes into it horizontally and vertically. Cut the zucchini into pieces. Cut the red onion into rings (if you prefer not to eat raw onion, you can also add the onion to the traybake before it goes into the oven).
Divide the eggplant, zucchini, potatoes and falafel over baking sheet. Drizzle with some olive oil, salt and pepper and the garlic powder and onion powder. Mix well and slide into the oven for 25-30 minutes or until the potatoes turn golden brown.
Coarsely chop the mint and dill. Squeeze one clove of garlic. Mix the herbs with the garlic and yogurt. Season with some salt and pepper.
Serve the traybake with the red onion, pomegranate seeds, yogurt dressing and some extra mint and dill.
