1 large red bell bell pepper
2 large tomatoes
150 gr cherry tomatoes
2 shallots
1 clove of garlic
olive oil
salt and pepper
300 gr risotto rice
400 ml of fish stock
dash of white wine
knob of butter
70 gr Parmesan cheese
+ extra for garnish
250 gr pulpo
precooked or fresh and cleaned
fresh chives
chopped

Are you using pre-cooked octopus from the supermarket? Then skip this step. For the fresh octopus, first rinse it well with warm water under the tap. Then bring a pan of salted water to a boil and cook the octopus in it for 1 hour. Then cut off the tentacles and cut the remaining part into pieces. Now you can proceed to step 2.

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Clean and halve the bell bell pepper. Also halve the tomatoes, one of the shallots and peel the clove of garlic. Place everything on the baking sheet along with the cherry tomatoes and drizzle with olive oil, salt and pepper. Slide into the oven for 30 minutes. Then puree everything except the cherry tomatoes into a smooth sauce with a pinch of salt and pepper. Keep the cherry tomatoes aside.

Chop the second shallot and bring the broth to a boil if you have not already done so. Heat some olive oil in a pan and sauté the shallot in it. Then add the risotto rice and deglaze with the white wine. Fry for 2 minutes. Add two tablespoons of stock to the rice and stir occasionally. When the liquid is almost absorbed, add new stock.

After about ten minutes, add the sauce to the rice and keep cooking until the rice is done. If it cooks dry and the rice is not quite done, add some more broth. Keep tasting until your risotto has the desired consistency.

Add the butter and Parmesan cheese and season with some salt and pepper.

Heat some olive oil in a pan and fry the octopus in it with some salt and pepper for about five minutes all around until golden brown.

Divide the tomato risotto among the plates and serve with the pulpo and cherry tomatoes. Garnish with additional Parmesan cheese, the chives and some pepper.
