What you need:

300 gr minced meat
2 large sweet potatoes
1 zucchini
200 gr spinach
300 ml sieved tomatoes or passata
4 tbsp herb cream cheese
1 shallot
100 gr grated cheese of your choice
1 clove of garlic
1 tsp paprika
fresh basil
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and grease a baking dish.

Peel the sweet potato and cut into thin slices.

Chop the shallot, squeeze the clove of garlic and dice the zucchini.

Heat some olive oil in a pan and fry the shallot in it. Then add the minced meat and fry until golden brown. Then add the zucchini and spinach along with a pinch of salt, pepper and paprika. Mix well and cook for 5 minutes. Then add the Boursin, passata, fresh basil to taste and garlic and simmer for a few more minutes.

Now we are going to build the lasagna. Spoon 1/3 of the mixture on the bottom and top with some sweet potato leaves. Repeat until all the leaves and sauce are used up. Finish with sweet potato! Top with the grated cheese and slide into the oven for 30 minutes until the sweet potato is cooked and the cheese is melted.
