Spaghetti bolognese with lots of vegetables is just what you want on a weekday. What could be more chilling than a quick spaghetti bolognese? You can always wake me up for it. When I first moved in, I used to buy those jars of pasta sauce from the supermarket. They are quite expensive and don't really taste like anything. Besides, they contain so much sugar and other strange ingredients that don't belong in a sauce at all. Since a few years I make all my own pasta sauces. And believe me: this is super easy, saves you loads of money and once you've tasted it, you'll never buy another jar of sauce from the supermarket again. Curious about this delicious bolognese sauce? Spaghetti with lots of vegetables is a delicious, healthy option for a meal that is both nutritious and filling. What you need:

500 gr minced meat
1 pack of spaghetti
2 zucchinis
4 peppers
2 tomatoes
500 ml passata
(sieved tomatoes)
2 shallots
1 onion
2 cloves of garlic
8 basil leaves
1 tbsp oregano
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and in it cook the spaghetti goes according to the package directions.

We'll start with the sauce first. Finely chop 2 shallots, half an onion and 1 clove of garlic and sauté for five minutes in a pan with a splash of olive oil. When everything has turned glassy put the sautéed onion, garlic and shallot in a blender along with the passata. Season with a generous pinch of salt and pepper and add the basil leaves and oregano as well. Blend until you have a smooth sauce. You can also use a hand blender if you find that easier.

Now finely chop the remaining shallot, onion and garlic and also sauté for a few minutes in a pan. Then add the minced meat and a generous pinch of salt and pepper and fry until loose.

Meanwhile, dice the peppers, tomato and zucchini.

When the minced meat is loose, add the bell bell pepper, tomato and zucchini and cook for 5 minutes. After 5 minutes, add the sauce and simmer for another 5-10 minutes.

Drain the spaghetti and serve along with your bolognese sauce. Garnish with some grated cheese.
