Salmon curry with rice

This salmon curry with rice is one to put on your menu every week from now on. Healthy, easy, quick and tasty: exactly what you want on any weekday. And it is also just right for the weekend. To impress your guests and for everyone who just loves salmon.

Why is eating salmon healthy?

I try to eat fish at least once a week these days. How often do you eat fish? There are several reasons why eating salmon every week can be a good idea:

  1. Health benefits: salmon is rich in omega-3 fatty acids, protein, vitamin D and minerals, such as selenium. These nutrients can help improve heart health, brain function and the immune system.
  2. Easy to prepare: salmon is a versatile fish that is easy to prepare. It can be grilled, baked, steamed or smoked, and what's more, it's also extremely quick to prepare. Easy peasy lemon squeezy!
  3. Taste: salmon has a delicious taste and can be prepared in a variety of ways, making it a favorite of many people. And now so is mine. Fun fact: I didn't like salmon until two years ago haha. That was because I had basically only eaten it raw and I (still) just don't like that. But you can wake me up for a fried salmon, for example in this salmon curry with rice!

Salmon curry with rice

This salmon curry with rice is not only hearty, healthy and delicious, but it's also on the table within 20 minutes and is the ultimate flavor bomb that will make any salmon hater's mouth water. What's nice about this recipe is that you don't have to cut much for the curry itself. Just an onion! I use sugar snaps, mini corn cobs and spinach that you can add right into the pan. That makes this curry an easy meal. I always garnish my curries quite extensively with different toppings. For example, I went for parsley, sesame seeds, chili flakes, spring onion and red pepper. Of course, you are free to vary the toppings you use. For example, you can substitute the parsley for cilantro if you like it better. You could also cook the red pepper in the curry sauce itself. The possibilities are endless!

What you need:

150 gr rice
2 salmon fillets of 125 g each
1 onion
250 gr sugar snaps
100 gr baby corn
250 gr spinach
200 ml sieved tomatoes
2 tbsp red or yellow curry paste
200 ml coconut milk
lime
sesame seeds to taste
chili flakes to taste
fresh parsley or cilantro
salt and pepper
olive oil
extra: spring onion and red pepper

What to do:

Bring a large pan of water to a boil and cook the rice in it according to the package directions.

Pat the salmon fillets dry and drizzle with olive oil, pepper and sea salt. Massage well on both sides of the fish.

Heat some olive oil in a pan and in it fry the salmon fillets with the skin side first on both sides for 3-4 minutes. Then remove from the pan and set aside.

In the same pan fry the onion along with the curry paste. Then add the sugar snaps, spinach and corn and fry for a few minutes. Then add the strained tomatoes, coconut milk and a pinch of salt and pepper and cook for 5-10 minutes.

During the last few minutes, add the salmon fillets to the curry and allow to warm up for a while. Ladle the sauce once over the salmon fillets as well.

Serve the salmon curry with the rice and garnish with lime, parsley/coriander, chili flakes, sesame seeds and chopped spring onion and chili pepper.
