Risotto with truffle salami, peas and green pesto

Risotto with truffle salami, peas and green pesto is a particularly delicious recipe. Every once in a while I just try something and it just turns out to be a hit. Let that be the case with this risotto with truffle salami. It actually started out as a kind of leftover day, but quickly became an unprecedented taste sensation. A nice salty and creamy risotto with the spice of truffle salami and a slight crunch from the peas. Topped off with basil and extra Parmesan, this is a dish you can say hello to! A great recipe for date night or to surprise your family with. You can make it in less than half an hour!

What you need:

200 gr risotto rice
1 liter of vegetable broth
125 ml dry white wine
100 gr Parmesan cheese
+ extra for garnish
few slices of truffle salami
1 shallot and 1 clove of garlic
2 tbsp green pesto of your choice
200 gr peas
(frozen)
few sprigs of basil
black pepper
olive oil

What to do:

Make the broth if you have not already done so.

Chop the shallot and squeeze the garlic. Heat some olive oil in a deep pan and fry the shallot in it glazed for 5 minutes. After a few minutes, add the risotto rice and garlic. Fry for a minute and then deglaze with the wine.

Then add 2 tablespoons of broth. Let the risotto cook gently. Add new broth when the liquid is absorbed. Do this just until the risotto rice is cooked.

When the risotto is done, add the Parmesan along with a pinch of pepper, the pesto and the peas. Stir through and let simmer for a few more minutes.

Finely chop the basil. Divide the risotto between plates and top with the truffle salami, additional Parmesan cheese and the basil. Top with some extra pepper, if desired.
