Risotto with burrata and roasted bell pepper sauce

Risotto with burrata and roasted bell pepper sauce is a vegetarian feast! Do you already know what you will eat for Christmas? I'd love to help you get some inspiration for a vegetarian main dish for Christmas. This creamy risotto with roasted bell pepper sauce and burrata is a real showstopper. It is super flavorful and and also ready within half an hour. Can you already see it shining on your Christmas menu?

What you need:

200 gr risotto rice
1 liter of vegetable stock
150 ml dry white wine
1 bulb of burrata
3 peppers
2 shallots
2 cloves of garlic
1 tbsp butter
1 tsp onion powder
fresh basil
salt and pepper
olive oil

What to do:

Heat the broth in a saucepan and preheat the oven to 220 degrees. Also line a baking sheet with baking paper.

Chop 1 shallot. Heat some oil in a deep pan and fry the shallot in it. Then add the risotto rice and deglaze with the white wine. Cook for 2 minutes and then add two tablespoons of broth. Stir and turn the heat down to low. When the broth is almost completely absorbed by the risotto rice, add new broth. Repeat this until the risotto rice is cooked. This takes about fifteen to twenty minutes.

Meanwhile, halve the peppers and remove the seeds. Remove the skin from the other shallot and clove of garlic and halve. Place the peppers, shallot and garlic on the baking sheet and drizzle with olive oil, salt, pepper and onion powder. Massage everything well and slide into the oven for 15 minutes.

Heat a frying pan and heat a little olive oil in it. Add the breadcrumbs and fry until crispy.

When the peppers are roasted, remove them from the oven and put everything in the blender. Add some more pepper, salt and fresh basil and blend until smooth.

Add the sauce to the risotto along with the butter and simmer for a few more minutes.

Serve the risotto with the burrata, the breadcrumbs, some fresh basil and a generous pinch of pepper.
