Ratatouille orzo with burrata

There is nothing like a delicious orzo pasta and this ratatouille orzo with burrata is not only very easy to make, but it is also on the table in no time. It is highly nutritious thanks to the many vegetables in it. Are you looking for more dishes with orzo? What is ratatouille?

Ratatouille is a dish from French cuisine that consists of stewed vegetables such as eggplant, zucchini, bell bell pepper, onion and tomato. The word "ratatouille" comes from the Occitan word "ratatolha" which means "mixed vegetable stew." The dish originated in the Provence region of southeastern France and is a popular vegetarian dish in French cuisine. Ratatouille is usually served as a side dish, but can also be eaten as a main course, for example with bread, rice or pasta. And the latter is exactly what I did with this dish.

In fact, the ratatouille orzo with burrata contains the roasted vegetables we know from a classic ratatouille, namely zucchini, eggplant, bell bell pepper and tomato. These vegetables, along with some delicious Italian herbs, are roasted in the oven before being added to the orzo. A fantastic vegetarian dish. The burrata on top completes it!

What you need:

200 gr orzo
1 bulb of burrata
1 zucchini
1/2 eggplant
1 sweet pointed bell pepper
1 red onion
1 clove of garlic
125 gr cherry tomatoes
6 sun-dried tomatoes
70 gr tomato paste
500 ml sieved tomatoes
1 tsp Italian herbs
fresh basil
olive oil
salt and pepper

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Also bring a pan of water to a boil.

Cook the orzo according to the directions on the package and catch half a cup of cooking liquid when draining.

Dice the eggplant, zucchini and bell bell pepper and divide among the baking sheet. Drizzle with olive oil, the Italian herbs and a pinch of salt and pepper. Mix everything together and bake in the oven for 20 minutes.

Halve the cherry tomatoes, chop the onion, squeeze the garlic and chop the sun-dried tomatoes.

Heat some olive oil in a pan and fry the onion in it. Then add the strained tomatoes, tomato paste, cherry tomatoes, sun-dried tomatoes, roasted vegetables, garlic and a handful of fresh basil. Mix together and then add the orzo and cooking liquid. Season everything with salt and pepper.

Divide the orzo among the plates and garnish with the burrata, a drizzle of olive oil, pepper and fresh basil.
