Do you know the secret to a nice crispy taco? Please stop buying taco shells from the supermarket. They don't taste like anything and have nothing to do with Mexican cuisine. I saw this with my own eyes last summer. Tacos become crispy because the tortillas are briefly toasted in a hot frying pan or on a hot griddle. This gives you a nice crunch. Highly recommended to try. In any case, it's a lot faster and easier than hanging those clumsy shells in your oven ;).
Today we are going for vegetarian tacos filled with chili sin carne and grated cheese. So you only need three ingredients for these delicious tacos. I always use the stand up pouches from HAK. They are packed with vegetables and already have sauce and spices. Just heat them up. Nice and easy, I like that. Looking for more Mexican inspiration? Mash the avocado together with the juice of the lime, garlic powder and a generous pinch of salt and pepper. Mash until you have guacemole.
Heat the contents of the standup pouch briefly in the microwave or in a (saucepan).
Top half of the tortilla with the beans and some grated cheese. Fold the tortilla closed. Repeat for all the tortillas.
Heat a non-stick frying pan on the stove. Make sure the pan is really hot and then turn down the heat. Place a taco in the pan (without oil or butter) and heat for 30 seconds on each side until it turns golden brown. Repeat for all the tortillas.
Serve the vegetarian tacos with the guacamole and fresh cilantro.
