What are udon noodles made of?

When it comes to Japanese noodle dishes, many people think of ramen or soba, but there is another type of noodle that has also captured the hearts (and taste buds) of many: udon noodles. Udon noodles are thick, soft wheat noodles that have been a favorite in Japanese cuisine for centuries.

Udon noodles are often served in a savory broth made from soy sauce, dashi (a Japanese broth made from fish and seaweed) and mirin (a sweet rice wine) and are often garnished with vegetables, tempura (deep-fried food) and/or egg. They are known for their thick and chewy texture, which distinguishes them from other noodle varieties. Udon noodles are versatile and can be served hot or cold, depending on the season and personal preference. I prefer to eat them hot with crispy vegetables, like this broccoli!

The origins of udon noodles date back to the ninth century in Japan, where they were first introduced by Buddhist monks from China. Since then, they have become a beloved dish in Japanese cuisine and can be found in restaurants and households across the country.

One of the most famous dishes using udon noodles is "Kake Udon," where the noodles are served in a hot broth with toppings, such as spring onions, tempura and/or nori (seaweed). "Zaru Udon" is a popular dish where the noodles are served cold with a dipping sauce and "Nabeyaki Udon" is a savory hotpot with udon noodles, vegetables, meat or fish and a rich broth.

Udon noodles are not only delicious, but they are also nutritious. They are a source of carbohydrates, fiber and protein, and they are also low in fat. In addition, they are gluten-free, making them suitable for people with gluten intolerance or celiac disease.

If you are a lover of noodle dishes or just looking for new culinary experiences, be sure to try udon noodles. They are a true taste sensation and a delicious addition to your culinary repertoire. So what are you waiting for? Get started!

What you need:

2
200 gr udon noodles
1 broccoli
1 red pepper
1 shallot
2 cloves of garlic
250 gr minced chicken
2 tbsp hoisin
1 tbsp soy sauce
2 tbsp soy sauce
spring onion
fresh parsley or cilantro
sesame seeds
salt and pepper
olive oil

What to do:

1

Bring two pans of water to a boil. Cut the broccoli into florets and cook them in one of the two pans for 10 minutes al dente. In the other pan cook the udon noodles until tender.

2

Chop the shallot and press the garlic. Heat some oil in a pan and fry the shallot in it. Then add the minced chicken with a pinch of salt and pepper and fry until loose. When the minced meat is done, add the hoisin, soy sauce and garlic. Stir well and let simmer for a while so that the sauce thickens.

3

Meanwhile, slice the spring onion and red pepper into rings and finely chop the parsley or cilantro.

4

Add the udon noodles and broccoli to the pan of minced chicken and sauce and mix well. Season with salt and pepper if necessary.

5

Divide among the plates and garnish with the spring onion, red pepper, sesame seeds and parsley or cilantro.
