Pumpkin stew with spicy chickpeas

We are making stew again today, namely pumpkin stew with spicy chickpeas. I am definitely not a fan of boiled potatoes and the stew as I always got it at home was often dry and mealy. I started a stew mini-series this winter in which I did everything but your average stew on the table. I experiment with vega(n), meat and fish. At first glance they sometimes seem strange combinations, but the flavors are really great. In this episode, we get to work with my favorite vegetable of the moment: pumpkin!

Pumpkin stew with chickpeas

Do you love pumpkin too? I do!!! You can use it in really any dish. I previously made this pumpkin curry and this pumpkin risotto mee. Today we are going for a delicious vegetarian stew with spicy chickpeas and feta. A real flavor bomb with not only lots of flavors, but also lots of textures. So you put a fantastic meal on the table that is also very tasty and also nutritious. Sounds good, right?

What you need:

750 gr floury potatoes
800 gr pumpkin
diced
1 can of chickpeas weighing 400 g
1 cube of vegetable stock
two handfuls of arugula
100 gr feta cheese
2 tbsp sambal
1 tbsp za'atar
1 tsp garlic powder
salt and pepper
olive oil

What to do:

Bring a large pan of water to a boil and crumble the stock cube over it.

Peel the potatoes and cut into equal pieces. Do the same for the squash. Put the potatoes and squash together in the water and cook for 15 minutes until soft and tender.

Preheat the oven to 220 degrees and line a baking sheet with baking paper. Drain the chickpeas and pat dry with paper towels.

Mix the sambal with the za'atar and some olive oil. Spread the chickpeas along with the sambal mixture on the baking sheet, making sure all the chickpeas are well coated. Slide into the oven for 10-15 minutes until the chickpeas have become crispy.

Drain the squash and potatoes and mash until coarsely mashed. Add half the feta, arugula, garlic powder and a pinch of salt and pepper and mix well.

Serve the stew with the chickpeas and remaining feta.
