Pumpkin risotto with sage and feta cheese

Pumpkin risotto with sage and feta is a fantastic vegetarian risotto to go out with on both weekdays and weekends. If you love creamy dishes, risotto is surely among your favorites! Risotto becomes creamy because the starch is released from the rice during cooking. As a result, you get a deliciously creamy substance. This vegetarian pumpkin risotto with sage and feta is one of my favorite recipes in the risotto category. It is mega creamy by adding the feta and hummus. The combination with the sage completes it. A top dish!

What you need:

200 gr risotto rice
1 liter of vegetable stock
125 ml dry white wine
1 small bottle pumpkin
1 tbsp pumpkin hummus
1 shallot and 1 clove of garlic
2 sprigs of sage
+ extra for garnish
50 gr feta cheese
chili flakes to taste
salt and pepper
olive oil
These supplies are for 2 people

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Cut pumpkin into small cubes (with skin) and place on baking sheet. Drizzle with olive oil, pepper and sea salt. Slide into the oven for 15-20 minutes.

Meanwhile, make the stock by bringing 1.5th liter of water to a boil with the stock cube.

Chop the shallot and squeeze the garlic. Heat some olive oil in a deep pan and fry the shallot in it glazed for 5 minutes. After a few minutes, add the risotto rice and garlic. Fry for a minute and then deglaze with the wine.

Then add 2 tablespoons of broth along with the sage sprigs. Keep two leaves for garnish. Let the risotto cook gently. Add new broth when the liquid has been absorbed. Do this just until the risotto rice is cooked.

When the risotto is ready, remove the sage sprigs from the pan and add the roasted diced pumpkin, hummus, chili flakes, 30 gr feta and some pepper. Mix well.

Serve the risotto with the remaining feta, some extra pepper and a sage leaf.
