Curry with pumpkin

What you need:

150 gr pandan rice
1 white onion
1 zucchini
1 large carrot
400 gr pumpkin puree
400 ml coconut milk
2 tbsp garam masala
olive oil
salt and pepper
optional: fresh parsley or cilantro

What to do:

Bring a pan of water to a boil and cook the rice in it according to the package directions.

Chop the onion and dice the carrot and zucchini.

Heat some oil in a pan and fry the onion in it. Then add the carrot and zucchini and fry for 5 minutes.

Then add the pumpkin puree, coconut milk, garam masala and a generous pinch of salt and pepper. Stir well and bring to a gentle boil. Simmer on low heat until the carrot has softened.

Serve the curry with the rice and some fresh cilantro or parsley.
