Puffed potato with garlic-yogurt sauce

70 minutes

Today we are making puffed potato with garlic-yogurt sauce. So I had never roasted a potato before in my life. It all seemed like quite a lot of work and very difficult. Nothing could be further from the truth, because it really was a piece of cake. It just takes you about 1 hour. I actually found that chill, because you just throw those potatoes in the oven and then you don't have to look at them anymore. Meanwhile, you can prepare the rest of the meal, do the dishes or whatever. I served the puffed potato with a homemade garlic-yogurt sauce and ate green beans and fish sticks (haha, love them) with it. Curious about the recipe? Then read on!

What you need:

2
2 medium potatoes
splash of olive oil
sea salt and pepper
aluminum foil
Garlic-yogurt sauce
100 ml vegetable yogurt
3 tbsp mayonnaise
salt and pepper
3 cloves of garlic
few sprigs of fresh chives
These supplies are for 2 people

What to do:

1

Preheat the oven to 200 degrees.

2

Scrub the potatoes clean under the tap and then pat them dry thoroughly.

3

Coat the potatoes in my olive oil and sprinkle generously with sea salt and pepper.

4

Wrap the potatoes in aluminum foil and place them on a baking sheet. Let them roast in the oven for about an hour.

5

Meanwhile, finely chop the chives and mix it with the yogurt, mayonnaise, pinch of pepper and pinch of salt. Then also squeeze 3 cloves of garlic over the sauce and mix everything well. Add some additional salt and pepper to taste.

6

When the potatoes are done, take them out of the oven and carefully cut them open. Using a fork, "loosen" the inside of the potato peel and put in a little garlic sauce. Mix it up a bit and serve with extra sauce and fresh chives.
