Potato gratin with three kinds of potato

This potato gratin with three types of potato is one to lick your fingers at. I use sweet potato, "normal" crumbly potato and red-skinned potato. All available at any supermarket. The nice thing about this is that you get a very nice color effect of orange, red and white/yellow. This looks beautiful and gives your potato gratin even more Christmas vibe. Also, I am a huge lover of salt, so I prefer to top my potato gratin with Parmesan cheese. This adds a lot of flavor to your dish and also contrasts beautifully with the sweet taste of the potatoes.

What you need:

350 gr sweet potato
350 gr floury potatoes
350 gr red potatoes
250 ml of cooking cream
40 gr Parmesan cheese
+ extra for garnish 
2 tbsp. Provencal herbs
fresh thyme
olive oil
salt and pepper
1 baking dish

What to do:

Preheat the oven to 200 degrees and grease a transfer dish.

Peel the sweet potato and crumbly potato. Do not peel the red potato. Cut all the potatoes into very thin slices.

Spread the potato slices alternately over the baking dish, making a nice round pattern.

In a bowl, mix the cooking cream with the Parmesan cheese, Provencal herbs and a generous pinch of salt and pepper. Pour this mixture over the potatoes in the baking dish and let it drip down well for a few minutes. Sprinkle the potatoes with some salt and pepper and slide the baking dish into the oven for 50 minutes. Keep a close eye on the gratin. Is it getting the dark? Then cover it with aluminum foil and finish the baking time in the oven, just until the potatoes are done.

Garnish the potato gratin with some extra Parmesan cheese and fresh thyme.
