Peanut chicken with rice and cucumber

This peanut chicken with rice and cucumber is a great meal for any day of the week. It is on the table in less than twenty minutes and is also packed with protein and fiber. The secret is in making your own peanut sauce. I hope I don't scare you off, because making your own peanut sauce is so incredibly easy and quick that I'm sure you'll never throw a jar of ready-made peanut sauce in your basket again after this.

Making your own peanut sauce

There are several reasons why I consider making my own peanut sauce the best option:

  1. Fresh ingredients: by making peanut sauce yourself, you have control over the quality of the ingredients. You can use fresh peanuts, herbs and spices, resulting in a much tastier sauce than ready-made versions.
  2. Adjust to taste: when you make your own peanut sauce, you can adjust the taste to your own preferences. Whether you like mild and creamy or spicy and potent, you can vary the ingredients to your liking. Ready-made peanut sauce is always super bland and blend (sorry not sorry) and homemade it has much more flavor.
  3. No preservatives or additives: commercial peanut sauces often contain preservatives, artificial flavors and added sugars (and a lot of other junk!). When making your own, you can avoid these unwanted additives and create a healthier, more natural sauce.

What you need:

150 gr brown rice
1 cucumber
200 gr chicken breast
2 tbsp chicken seasoning
2 tbsp peanut butter
2 tbsp soy sauce
150 ml of coconut milk
50 ml of water
handful of unsalted peanuts
chili flakes to taste
salt and pepper
olive oil
fresh coriander
or parsley

What to do:

Bring a pan of water to a boil and cook the rice in it according to the package directions.

Cut the chicken breast into strips. Heat 1 tbsp olive oil in a frying pan and fry the chicken breast in it along with the chicken seasoning and a pinch of salt and pepper until golden brown. Meanwhile, cut the cucumber into slices and finely chop the parsley. Also coarsely chop the peanuts.

In a saucepan, mix the peanut butter with the soy sauce, coconut milk (keep 2 tbsp. for garnish) and water. Bring to a boil while stirring until the peanut sauce thickens. Note: keep stirring well, it cooks quickly. Sauce too thick? Add extra water.

Divide the rice, cucumber and chicken among the plates. Top with the peanut sauce, coconut milk, peanuts, parsley and some chili flakes, if desired.
