It tastes just as good as it sounds. I've had an obsession with everything peanut for years: peanuts, peanut butter, peanut sauce and so on. It just makes everything taste good, including this crème brûlée. And the nice thing is: this dessert is incredibly easy to make. It always works!

Crème brûlée is a classic French dessert that originated in the 17th century. The name literally means "burnt cream" and refers to the distinctive layer of caramelized sugar atop a silky custard. Although France often gets credit for this sophisticated dessert, similar dishes can be found in Spain (crema catalana) and England (burnt cream). The modern version, as we know it today, became especially popular through French cuisine and is loved for its simple yet refined taste.

What you need:

400 ml of whipped cream
1 tsp vanilla extract
2 tbsp 100% peanut butter + extra for garnish
70 gr granulated sugar
5 egg yolks
2 tbsp cane sugar
2 tbsp unsalted peanuts

What to do:

Preheat the oven to 120°C and prepare four dishes. In advance, boil a good amount of water in the kettle.

Pour the whipping cream into a saucepan and add the vanilla flavoring. Also add the peanut butter and half the granulated sugar and bring to a gentle boil. Keep stirring constantly. When the mixture begins to boil, turn off the heat.

In a bowl, whisk the egg yolks together with the second part granulated sugar. Add the warm whipped cream mixture while continuing to beat with a whisk. Mix everything well and then pour the substance into the dishes. Place the dishes in a baking dish (or two baking dishes) or roasting pan and fill with the boiling water so that the water comes halfway up the dishes. Slide the baking dish into the oven for 30 minutes. The custard will now be firm, but it may still be quite wobbly. This is as it should be. Remove the crème brûlée from the water bath and let it cool on the counter for 45 minutes. Then place the dishes in the refrigerator for 3 hours to stiffen.

Finely chop the peanuts. Just before serving, sprinkle the bowls with the cane sugar and burn the sugar with a gas burner to a nice golden brown coating. Spread the peanuts over the top along with a drizzle of peanut butter.
