Pasta with zucchini and burrata

You can wake me up for a creamy pasta any day. This pasta with zucchini and burrata is inspired by the pasta alla Nerano that I ate many times in Sorrento on Italy's Amalfi Coast. This pasta is SO delicious. In fact, I am really addicted to zucchini. Besides, pasta recipes are always a good idea, especially for weekdays. It's easy, quick, nutritious and you make everyone happy.

Pasta alla Nerano

Pasta alla Nerano is a delicious Italian dish from the Campania region, whose main ingredients are zucchini and provolone cheese. The dish is traditionally prepared with spaghetti or another long pasta type, which is served with a sauce of sautéed zucchini, garlic, olive oil, basil and provolone cheese. The result is a flavorful, creamy pasta that is both vegetarian and savory. The dish gets its name from the town of Nerano on the Campania coast, where it originated.

Pasta with zucchini and burrata

This delicious pasta with zucchini and burrata is very easy to prepare and you only need a few ingredients. To give the zucchini sauce extra flavor, grill the zucchini slices first. What you need:

200 gr pasta
1 bulb of burrata
1 green zucchini
1 yellow zucchini
3 tbsp pine nuts
1 clove of garlic
fresh basil
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and cook the pasta in it until tender. Drain it when it is just barely cooked (1 min before the cooking time). Catch a cup of cooking liquid when draining.

Meanwhile, slice the zucchini and heat a grill pan (possibly with some olive oil in it), Grill in it the zucchini slices on both sides so that they get nice grill stripes.

Now put half of the grilled zucchini in the blender along with a generous handful of basil, 2 tbsp of the pine nuts, the garlic, a pinch of salt and pepper and a splash of water. Blend until a smooth sauce forms. Sauce too thick? Add additional water until desired thickness is reached.

Heat the sauce in a skillet and add to it according to the pasta along with the cooking liquid. Stir until the sauce is attached to the pasta.

Serve the pasta with the burrata, extra fresh basil, remaining zucchini slices and pine nuts. Top with a pinch of black pepper.
