Every year I embrace pumpkin as my favorite fall vegetable. I eat it several times a week. Thank God that supermarkets, including Albert Heijn, sell many pre-cut bags of diced pumpkin. After all, cutting them is a real crime. Take advantage of it!

What you need:

200 gr pasta
1 bulb of burrata
400 gr pumpkin cubes
6 slices of parma ham
2 tbsp pistachios
2 tbsp. honey
1 tsp garlic powder
fresh basil
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Place the pumpkin cubes or pieces on the baking sheet and drizzle with olive oil, garlic powder, pepper and salt. Massage well and slide into the oven for 15 minutes.

Bring a pan of water to a boil and cook the pasta al dente according to the package directions. Then drain and rinse with cold water. Let dry briefly in the colander or pan.

Coarsely chop the pistachios and basil.

Scoop the pasta onto a plate and top with the pumpkin, burrata, Parma ham, pistachios and garnish with a generous pinch of salt and pepper, some olive oil, fresh basil and the honey.
