Orzo with kale sauce

This orzo with kale sauce is a delicious vegetarian pasta. Kale is usually used for in stew, but did you know you can do much more with it? I myself am a big fan of kale. This versatile vegetable is one of the healthiest around! There are an awful lot of vitamins in kale. According to this source in about 250 grams of kale, there are as much as 2600% of the RDA for vitamin K, 700% of the RDA for vitamin A, 180% of the RDA for vitamin C, 52% of the RDA for manganese, 20% of the RDA for copper and 20% of the RDA for calcium. That's huge!

Versatile vegetables

I bet many readers have only ever used kale for stew. And that's not a bad thing at all. Until a few years ago, that was also the only dish I made with it. Fortunately, you can do much more with kale. It's delicious in salads, from the oven (then it gets crispy!), but also in sauces. In this orzo, kale plays the main role in the sauce. Just blend it with some seasonings and you have a delicious (and super nutritious) kale sauce. Delicious with lemon, Parmesan cheese and bimi! Still secretly looking for a stew recipe with kale? What you need:

200 gr orzo
200 gr bimi
250 gr kale
150 gr Parmesan cheese
1 lemon
100 cooking cream
1 shallot
1 clove of garlic
1 tbsp green pesto
chili flakes to taste
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and cook the orzo in it according to package directions. Catch half a cup of cooking liquid with draining!

Grate the zest of the lemon. Place the lemon zest along with the juice of 1/2 lemon, the kale, shallot, garlic, milk/cooking cream and a generous pinch of salt and pepper in the blender. Blend until a smooth sauce forms.

Pour the sauce into a greased pan and heat. Then add 100 gr Parmesan cheese, pesto, juice of the other half of the lemon and some chili flakes. Stir well. Then add the orzo along with the cooking liquid and a pinch of pepper. Let simmer gently.

Meanwhile, heat some oil in a frying pan and in it fry the bimi with a pinch of salt and pepper for a few minutes until crispy.

Serve the orzo with the bimi and remaining Parmesan cheese. Garnish with additional chili flakes.
