Noodles with crispy chicken, bimi and pineapple

20 minutes

After the success of the previous noodle bowl, we're just throwing in another one: noodles with crispy chicken, bimi and pineapple. It sounds like an unusual combination, but it's really quite delicious. I personally use a vegetarian crispy chicken burger in this dish, but of course you can also just go for the real deal. Or bread one yourself if you want to go crazy. Your self bepils shall we say. I always opt for udon noodles myself. They are not only fucking delicious, but also ready within 1 minute and all sauces stick to them perfectly.

What are udon noodles?

Udon noodles are a type of thick, chewy noodles originally from Japan. They are made from wheat flour, water and salt and have a smooth, thick and soft texture. Udon noodles are wider and thicker than soba noodles or ramen noodles, for example. I personally really like chewy, which is why these are perfect for me.

The name "udon" comes from the Japanese word "うどん" which refers to this type of noodle. They are a popular dish in Japanese cuisine and are often served in soups or stir-fries. One of the most famous dishes is "Kake Udon," in which the noodles are served in a hot broth based on dashi (a type of Japanese broth) and soy sauce, often garnished with spring onions, tempura or kamaboko (fish cakes).

Udon noodles have also become popular outside Japan and are served in many Asian restaurants around the world. They are versatile and can be combined with different ingredients and sauces, making them a tasty and easy meal.

Noodles with crispy chicken, bimi and pineapple

You can never really go wrong with noodles. Add a piece of fish, meat or meat substitute, some vegetables a nice sauce and you have a fantastic dish. Earlier I made this noodle bowl with minced chicken and broccoli and this noodle bowl with sticky eggplant and gyoza. All incredibly versatile, flavorful and delicious. All these bowls are on the table within 20 minutes and you are guaranteed to enjoy them. Enjoy your meal!

What you need:

2
400 gr fresh udon noodles
2 crispy chicken burgers
can also be veggie
400 gr bimi
150 gr fresh pineapple
2 stalks of spring onion
4 tbsp. soy sauce
2 tbsp hoisin
2 tbsp soy sauce
1 tsp garlic powder
sesame seeds
olive oil
salt and pepper

What to do:

1

Bring a pan of water to a boil, but wait a bit before adding the udon noodles (provided they are ready within a minute).

2

Clean the bimi and dice the pineapple. Heat some olive oil in a frying pan and fry the crispy chicken burgers in it on both sides until golden brown.

3

Heat some olive oil in a second pan and fry the bimi in it with a pinch of salt and pepper. Then add the soy sauce, hoisin, soy sauce and garlic powder and mix. Now cook the noodles for 1 minute until tender. Remove them from the water and add them to the bimi along with the pineapple. Stir well so that the sauce sticks to the udon noodles.

4

Chop the spring onion into rings and slice the crispy chicken burgers. Divide the noodles among plates and serve with the crispy burgers and spring onion. Garnish with sesame seeds and some black pepper, if desired.
