The combination of zucchini and noodles in this noodle bowl with zucchini and egg is truly a match made in heaven.

Zucchini, also known as zucchini, is a versatile vegetable that pairs perfectly with noodles. This combination offers not only a flavorful meal, but also numerous health benefits. Zucchini is rich in fiber, vitamin C and other important nutrients, while noodles provide a satisfying texture. Especially if you use udon noodles. You can just buy those at Albert Heijn or Jumbo.

Udon noodles are additionally very top notch. Not only are they ready within a minute, but they also stay nice and sticky so any sauce sticks to them very well. And I like thick chewy noodles much better than those thin strands anyway. Of course, if you prefer thin noodles, no problem. Pick your favorite!

Where do you get udon noodles?

You can find Udon noodles in different stores, depending on your location. In the Netherlands, they are often sold in Asian supermarkets, where you have a wide choice of fresh, dried or precooked varieties. Large supermarkets like Albert Heijn, Jumbo or Lidl also often carry udon noodles, usually on the international shelves. Online, you can order them through web shops specializing in Asian products. If you choose fresh udon, make sure they are refrigerated. Dried udon have a longer shelf life and are easy to prepare, just like pasta.

What you need:

400 gr udon noodles
1 large zucchini
2 eggs
1 tbsp sriracha
150 ml yogurt
1 tsp garlic powder
1 tbsp. white and black sesame seeds
2 tbsp soy sauce
Thai basil
salt and pepper
sesame oil for frying

What to do:

Halve the zucchini lengthwise and halve the halves again so that you get angled quarters. Cut the quarters into pieces.

Heat some oil in a frying pan and in it fry the zucchini all around until golden brown with some garlic powder, pepper and salt.

Meanwhile, heat the noodles in a pan of hot water for a minute to loosen them (or otherwise indicated on package) and fry two fried eggs.

Mix the yogurt with the sriracha and a pinch of salt and pepper. Drain the noodles and mix with the soy sauce.

Divide the noodles among the bowls and top with the zucchini, egg, sriracha yogurt and some Thai basil. Garnish with the sesame seeds.
