Noodlebowl with gyoza and sticky eggplant

It's time again for a new recipe with noodles, namely this noodle bowl gyoza and sticky eggplant. A delicious vegetarian dish that is super fast on the table and also very nutritious. Packed with vegetables, flavor and above all pleasure. I really love eggplant and make recipes with it regularly. What is gyoza?

In addition to eggplant, I use gyoza in this recipe. Gyoza are a popular Japanese street food dish that consists of small dough packets filled with meat or vegetables and spices. Gyoza is super popular right now and you can find it in a lot of restaurants. And I can understand why!

  1. Taste: gyoza has a delicious taste thanks to the combination of the savory filling and the chewy AND crispy texture of the dough. Moreover, the herbs and spices used in the filling are often very flavorful.
  2. Convenience: gyoza is relatively easy to prepare and can be quickly baked, steamed or boiled. This makes it a popular choice for busy people who want a quick and easy meal but still want to continue to enjoy culinary delights. I use this gyoza from the freezer and they taste really good. You heat them up in less than three minutes.
  3. Versatility: gyoza can be filled with different types of meat, vegetables and spices, making it suitable for different tastes and dietary needs. I use vega(n) gyoza, but you can also buy/make gyoza with minced chicken, for example.
  4. Social food: gyoza is often served as a shareable dish, making it perfect as a tapas appetizer to share, for example.
  5. Culture: gyoza is an important part of Japanese culinary tradition and is often associated with conviviality and comfort food.

Noodlebowl with gyoza and sticky eggplant

This gyoza recipe is very easy to make and quick to prepare. I actually always have a bag of frozen gyozas from the supermarket or from the toko in my fridge. They are also delicious as a snack or with drinks!

What you need:

250 gr noodles or noodles
10 gyozas
1 large eggplant
1 stalk of spring onion
1/2 red pepper
2 tbsp soy sauce
2 tbsp soy sauce
1 tbsp hoisin
1 tsp garlic powder
1 tsp onion powder
sesame seeds
salt and pepper
oil for frying

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Cut the eggplant into slices and carefully dice with a dicing pattern. Do not cut all the way through! Drizzle both sides with some olive oil, pepper, sea salt, garlic powder and onion powder. Spread the slices on the baking sheet and bake for 15 minutes in the oven. Meanwhile, make the sauce by mixing the soy sauce with the soy sauce and hoisin. You can pre-heat this sauce in a frying pan. Turn the burner on low and heat gently.

Meanwhile, cook the noodles according to the package directions. Also cut the spring onion and red pepper into rings.

Meanwhile, prepare the gyoza according to package directions.

Remove the eggplant from the oven and add the slices to the heated sauce in the skillet. Let fry well on both sides so that the eggplant slices absorb the sauce well.

Now make the noodle bowls. Start with the noodles and then divide the gyoza, eggplant slices, spring onion and red pepper among the bowls. Garnish with the sesame seeds and remaining sauce from the pan.
