Preheat the oven to 200 degrees and line a baking sheet with baking paper.
Rub the sweet potatoes with some olive oil and sprinkle with salt and pepper. Wrap them with aluminum foil and place them on the baking sheet. Slide into the oven for 30-40 minutes, until they have softened.
Chop the spring onion and jalapeño into thin rings. Coarsely chop the cilantro.
Mix the beans with the corn, the juice of half a lime and some salt and pepper.
Remove the cooked potatoes from the oven and slice them in half lengthwise. Fill them with the bean mixture and top with the cheddar and some salt and pepper. Slide back into the oven for 10 minutes.
