Lasagna soup with ricotta and basil

Lasagna soup with ricotta and basil is the perfect quick and vegetarian meal. Looking for delicious and warming comfort food? This vegetarian and creamy lasagna soup has it all. Lasagna soup might make you wonder, but once you taste it, you'll be completely won over! It's a cross between a nice full-bodied soup and pasta and it's just what you need on a rainy day. The advantage of this vegetarian lasagna soup is that it is a lot faster to prepare than classic lasagna from the oven. No need to build a lasagna and wait a long time for the oven, just put everything together in 1 pan and let this simmer nicely. Top the vegetarian lasagna soup with some ricotta, grated cheese and basil and you have great comfort food! Do you prefer a soup with an Asian touch? Then go for this quick veggie noodle soup.

Variation

In classic lasagna and lasagna soup, of course, "real" minced meat is used. In this dish I use this vegetarian minced meat. Should you want to go for real meat, you can just fry the minced meat at the same time as the veggie mince goes in. Just make sure that the minced meat is cooked all the way through before you proceed to the next step!

What you need:

200 gr vegetarian minced meat
100 gr ricotta cheese
250 ml sieved tomatoes
1 liter of vegetable broth
(= 1 liter of water with 2 bouillon cubes)
handful of grated cheese
(I always use aged cheese for extra salty flavor)
X gr lasagna sheets
1 large zucchini
1 shallot and 1 clove of garlic
1 tsp Italian herbs
fresh basil
salt and pepper
olive oil
These supplies are for 2-3 people

What to do:

Prepare the broth if you have not already done so.

Dice the zucchini and chop the shallot. Chop the garlic as well.

Heat some oil in a deep large pan. In it, fry the shallot and garlic and after 3 minutes add the vegetarian mince. Fry for a few minutes.

Add the zucchini along with a pinch of salt, pepper and the Italian herbs. Fry for a few minutes.

Now add the strained tomatoes and broth. Break the lasagna sheets into equal pieces and add as well. Stir everything well and bring to a boil. Set it to simmer on low and low for 8-10 minutes until the lasagna sheets are soft and the soup has thickened.

Finely chop the basil and add to the soup along with a handful of grated cheese and a generous pinch of salt and pepper. Reserve some basil and grated cheese for garnish. Mix everything well and simmer for another 2 minutes.

Ladle the soup into the bowls and garnish with a tablespoon of ricotta, additional grated cheese and basil.
