Italian stew with sweet potato and spinach

This Italian stew with sweet potato and spinach is incredibly easy and super quick to prepare. Spinach and sweet potato go well together because they are complementary in taste and texture. Spinach has a fresh, bitter-sweet flavor that is a perfect counterpart to the sweet taste of sweet potatoes. The firm texture of sweet potatoes is a nice contrast to the soft and juicy spinach. This delicious stew is richly topped with sun-dried tomato, basil and Parmesan cheese, among other ingredients. This delicious Italian trio really takes any dish to a new level. What I love about Italian cuisine is that you can put a mega taste sensation on the table with relatively easy and simple ingredients.

What you need:

1 kilo of sweet potatoes
500 gr spinach
1 cube of vegetable stock
2 handfuls of Parmesan cheese
flakes
200 gr sun-dried tomatoes
2 tbsp pine nuts
1 tsp garlic powder
1 tsp onion powder
fresh basil
salt and pepper
olive oil
2-3 people

What to do:

Bring a large pan of water to a boil and crumble in the stock cube. Peel the potatoes and cut them into equal pieces. Cook them for about 15 minutes. Drain and return to the pan.

In another pan heat a dash of olive oil. In this fry the spinach until it has shrunk. Then let it cool for a moment and optionally squeeze out the liquid over a colander.

Drain the sun-dried tomatoes. Heat a dry frying pan and toast the pine nuts in it until golden brown.

Coarsely mash the potatoes. Add the spinach, sun-dried tomatoes and a handful of Parmesan cheese. Also add the garlic powder, onion powder and a pinch of salt and pepper. Blend everything into a stew.

Serve the stew with Parmesan cheese, fresh basil and pine nuts.
