Italian stew with chorizo and spinach

Today we are making Italian stew with chorizo and spinach. We continue the stew mini-series with a new stew! In case you missed it: all fall and winter long I'm posting delicious recipes that are anything but your average stew. Full of flavor, spice and of course a touch culi. But all of course very simple with ingredients you can buy at any supermarket. I kicked off the series with this sweet potato stew with chicken meatballs and feta, followed by this cauliflower stew with halloumi. Now we continue with numbero 3!

Italian stew

Of all the different cuisines, Italian is definitely one of my favorites. And of course you can very well incorporate it into an Italian stew! This Italian stew with chorizo and spinach is a real taste bomb and will make any stamper's mouth water. The spicy chorizo goes very well with the mild pesto and the pine nuts give it a delicious crunch. A stew you can say hello to! Are you going to make it?

What you need:

750 gr floury potatoes
400 gr spinach
100 gr (spicy) chorizo
100 gr sun-dried tomatoes
250 gr cherry tomatoes
2 tbsp red pesto
1 tsp garlic powder
2 tbsp pine nuts
dash of milk
fresh basil
salt and pepper

What to do:

Bring a large pan of water to a boil. Peel and halve the potatoes. Boil them for about 10-20 minutes until tender and soft.

Cut the chorizo into cubes. Heat a frying pan and fry the chorizo in it until crispy. Then remove from the pan and set aside.

Now in the fat of the chorizo, fry the spinach until it has shrunk.

Drain the potatoes and add a dash of milk, the garlic powder, the spinach and a pinch of salt and pepper. Mash until coarsely mashed.

Halve the cherry tomatoes. Add to the pan along with the, sun-dried tomatoes and pesto. Mix together briefly.

Briefly toast the pine nuts in a hot skillet.

Serve the stew with the pine nuts and some fresh basil.
