Halloumi in curry sauce with rice

What you need:

150 gr pandan rice
1 white onion
1 clove of garlic
200 gr halloumi
1 red pepper
150 gr sugar snaps
200 ml coconut milk
2 tbsp curry powder
1 tbsp. cornstarch + 2 tbsp. water
handful of fresh coriander
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and cook the rice according to the package directions.

Chop the onion and finely chop the garlic. Cut the halloumi into cubes and the red pepper into rings. Heat some olive oil in a pan and fry the halloumi all around until golden brown. Remove from the pan and set aside.

Heat oil again in the same pan and fry the onion and garlic in it. Then add the sugarsnaps along with the red pepper and season with salt and pepper. Fry for 3 min. Then add the coconut milk along with the curry powder and mix together. Let cook for 2 min.

Make a paste by mixing the cornstarch with the water and add it to the sauce. Keep stirring until the sauce thickens and further season with salt and pepper. Also stir the halloumi into the sauce to reheat with it.

Divide the curry among the plates and serve with the rice, cilantro and a pinch of pepper.
