Green ravioli with garden pea

Green ravioli with garden pea, spinach and zucchini tastes as good as it sounds. I use this ravioli and with it I make a delicious sauce of sautéed zucchini and spinach. This sauce is super creamy, healthy and packed with good nutrients. Top your pasta with garden peas and some extra Parmesan cheese and you have a divine pasta! A healthy vegetarian pasta for every day that is ready in 15 minutes!

What you need:

250 gr ravioli of your choice
1 zucchini
125 gr garden peas (frozen)
125 ml of cooking cream
75 gr fresh spinach
50 ml of tap water
or cooking liquid
40 gr Parmesan cheese
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and cook the ravioli according to the package directions. Catch half a cup of the cooking liquid when draining.

Cut the zucchini into slices. Heat some oil in a pan and fry all the zucchini slices in it on both sides until golden brown. Remove from the pan and set aside.

Put 1/3 of the sautéed zucchini together with the spinach, cooking cream 50 ml water and 3/4 of the Parmesan cheese in the blender. Season with salt and pepper and blend to a smooth sauce. Return the sauce to the pan in which you sautéed the zucchini and add the cooked ravioli, garden peas and remaining zucchini slices. Heat stirring and add some additional cooking liquid if necessary.

Divide the ravioli among the plates and garnish with the remaining Parmesan cheese.
