Green lasagna with zucchini, minced chicken and spinach pesto

Today we are making green lasagna with zucchini, minced chicken and spinach pesto. After all, it's time again for a tasty lasagna! Lasagna is a classic Italian dish that has been popular around the world for centuries. It consists of layers of pasta, tomato sauce, cheese and meat or vegetables. The origin of lasagna goes back to ancient Rome, where you can also sincerely eat the most delicious lasagna ever. You must have tasted that one! This green version is full of vegetables and a green pesto. A variation on the well-known classic.

How do you make lasagna?

Making lasagna is not difficult, but it does require some preparation with cooking the "filling. So here you can start to vary. Instead of a classic tomato sauce, I make a sauce of spinach and pesto. You make this very easily by mixing a pesto of your choice with some spinach and (vegetable) creme fraiche. Not only does this add extra flavor, but it's also very easy to add extra vegetables to your dish. To this I then add vegetables and meat of my choice. I choose minced chicken instead of traditional minced beef (ragù) and I also use zucchini, spinach and garden peas.

Next, the building of the lasagna begins. The bottom of the baking dish is covered with a layer of the spinach pesto, followed by a layer of zucchini slices and then filling. On top of that comes a layer of lasagna sheets. This process is repeated until all the ingredients are used up and there are enough layers to build up the lasagna. The last layer should consist of cheese. A traditional lasagna often uses mozzarella, but I use Parmesan cheese and some zucchini slices as a "roof" in this recipe.

The lasagna is then baked in the oven until the top is golden brown. The result is a delicious and nutritious meal that is perfect for a family dinner or dinner with friends.

There are many more variations on the traditional lasagna, such as this green lasagna with zucchini, minced chicken and spinach pesto. I previously made my own a lasagna soup with ricotta and basil. All the delicious flavors of a lasagna, but incorporated into a soup. Or how about this lasagnette bolognese where the lasagna sheets are already added in the pan? This makes lasagna even easier. In Italy, lasagna is often served with a salad and a glass of red wine. But as you have read, it is a versatile dish that can be easily adapted to the tastes and preferences of each individual eater. Whether you make a classic lasagna or a modern variation, it is always a tasty as well as satisfying meal.

What you need:

6 lasagna sheets
1 zucchini
1 white onion
1 clove of garlic
150 gr garden peas
350 gr spinach
250 gr minced chicken
125 gr crème fraîche
3 tbsp green pesto
2 tbsp Italian herbs
50 gr Parmesan cheese
fresh basil
fresh thyme
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and grease a baking dish.

Chop the onion and squeeze the garlic. Cut the zucchini into very thin slices so that they are almost translucent.

Heat some olive oil in a pan and fry the onion in it. Then add the minced chicken along with a pinch of salt and pepper and fry until loose. Then add 250 grams of spinach along with the garlic and fry until shrunken.

Meanwhile, put the pesto together with the remaining 100 gr of spinach, a handful of fresh basil and the crème fraîche in the blender and blend it to a smooth pesto. If it remains too thick, you can add a little water. Then add 4/5 of the sauce to the pan along with the garden peas and 1 tbsp Italian herbs. Season everything with salt and pepper.

Spread the remaining sauce over the bottom of the baking dish and top with zucchini slices. Now pour 1/3 of the filling on top and top with 3 lasagna sheets and zucchini slices again. Now repeat until all is used up. Finish with a layer of sauce and zucchini slices.

Drizzle the top layer with a little olive oil and top with the Parmesan cheese and the remaining Italian herbs. Season with some salt and pepper to taste. Bake the green lasagna with zucchini, minced chicken & spinach pesto for about 20-25 minutes in the oven until the top is golden brown and the lasagna sheets are cooked.

Serve with the fresh basil and thyme.
