What you need:

250 gr gnocchi
1 white onion
1 clove of garlic
400 ml sieved tomatoes
150 ricotta
+ extra for garnish
400 gr fresh spinach
180 gr sun-dried tomatoes
optional: vegetarian chicken pieces
diced
1 tsp dried rosemary
1 tsp oregano
fresh basil
salt and pepper
olive oil

What to do:

Bring a pan of salted water to a boil and cook the gnocchi in it according to the package directions. Catch a cup of the cooking liquid when draining.

Chop the onion and squeeze the clove of garlic. Cut the sun-dried tomatoes into thin strips.

Heat some olive oil in a pan and fry the onion in it. Now add the vegetarian chicken pieces if you want to add them in the dish. Season with salt and pepper. Then add the spinach and fry until it has completely shrunk.

Now add the garlic, strained tomatoes, oregano, rosemary, 150 gr ricotta, sun-dried tomato and another pinch of salt and pepper. Mix well and turn down the heat. Let simmer gently, stirring occasionally.

Add the cooked gnocchi and some cooking liquid to the pan of sauce and mix everything well. Sauce too thick? Add additional cooking liquid until it feels, tastes and tastes right to you.

Spoon the gnocchi onto the border and garnish with the fresh basil and ricotta. Garnish with black pepper if desired.
