Crispy falafel burrito

This crispy falafel burrito is the perfect dinner or lunch (to go) for anyone who doesn't feel like standing in the kitchen for a long time. A vegetarian and high-protein recipe that is ready in 10 minutes.

What is falafel?

Falafel is like a party in your mouth! Small, crispy balls or rounds made from ground chickpeas or beans, flavored with spices such as coriander, cumin and garlic. These delicious balls are then deep-fried until golden brown and nice and crispy on the outside, while remaining deliciously soft and creamy inside. You can also fry them in the pan or oven.

The origin of falafel is a bit of a mystery, like an adventure story that travels through different cultures and countries. Some believe it has its roots in Egypt, others claim it comes from the Middle East, such as Lebanon or Israel. It is as if falafel itself is a world traveler, and everywhere it goes, it conquers hearts with its taste.

Best of all, falafel is so versatile! You can eat it as a delicious snack, in a pita bread with some crunchy vegetables and creamy sauces, or even as part of a tasty salad. It is a dish that brings everyone together, no matter where it comes from.

What you need:

⅔ cucumber 
2 tomatoes
1/2 red onion
30 gr feta cheese
200 gr falafel 
2 large wraps
natural or whole wheat
handful of lettuce
2 tbsp garlic sauce
fresh dill 
salt and pepper
olive oil

What to do:

Cut the cucumber and tomato into small cubes. Put with some salt and pepper in a bowl and mix.

Chop the red onion into thin rings and crumble the feta.

Heat some olive oil in a pan and fry the falafel in it all around until golden brown. Remove from the pan and clean the pan with a piece of kitchen paper. Turn down the heat and keep the burner on.

Top the wraps with the lettuce, cucumber and tomato, red onion, falafel, feta, the garlic sauce and some salt and pepper. Top with some fresh dill to taste. Fold this really lay with the fold edge down in the pan to toast it. Turn over after a minute and toast the other side as well.

Cut the wrap in half and enjoy.
