Creamy pumpkin gnocchi with tofu crumble

What you need:

250 gr gnocchi
400 gr pumpkin in cubes
150 gr tofu
1 tbsp cornstarch
1 tsp spicy paprika
100 gr pumpkin hummus
40 gr Parmesan cheese
1/2 tsp chili flakes
100 ml of cooking cream
fresh dill
fresh basil
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Place the pumpkin cubes on the baking sheet and drizzle some with olive oil, pepper and salt. Mix and slide into the oven for 20 minutes.

Drain the tofu and pat dry with a piece of kitchen paper. Place in a bowl along with the cornstarch, paprika and a generous pinch of salt and pepper and shake until everything is coated.

Heat some olive oil in a frying pan and get well hot. Now add the tofu and fry for 10 minutes until crispy all around. Keep turning regularly and season with salt and pepper. Set aside.

Cook the gnocchi according to the directions on the package and collect half a cup of cooking liquid when draining.

Put 4/5 of the squash in tall mug and add the hummus, Parmesan cheese, chili flakes, cooking cream, basil, dill and some salt and pepper. Blend with a hand blender until smooth.

Again, heat some olive oil in a pan and add the sauce to it. Then add the gnocchi and cooking liquid and mix until everything is well blended.

Divide the gnocchi among the plates and garnish with the pumpkin, tofu and some extra chili flakes and Parmesan cheese.
