Creamy gnocchi with peppers and burrata

Today we are going to work on this creamy gnocchi with bell bell pepper and burrata. Gnocchi is enormously versatile! It can be baked, boiled or grilled and can be made with different flours. This allows it to be adapted to various tastes and dietary needs. Gnocchi is so popular because it is a tasty and convenient dish that is easy to make. It is often associated with Italian cuisine and has a unique, creamy texture that many people like. In addition, it is also a versatile dish that can be served with a lot of different sauces and ingredients, making it perfect for both vegetarians and meat eaters. Moreover, it is a budget-friendly option that can often be made in large quantities, making it ideal for families or groups.

Gnocchi with burrata

Gnocchi and burrata go well together because they have complementary flavors and textures. Gnocchi has a creamy, soft texture and is usually cooked in a sauce, while burrata has a rich, creamy flavor and a soft, melt-in-your-mouth texture. What exactly is burrata? Burrata, a type of mozzarella, is often used as a garnish for pasta dishes, such as gnocchi, and adds an extra dimension of flavor and texture. The juicy, melting burrata creates a wonderful contrast to the creamy gnocchi. The sauce often used with gnocchi, like in this case a creamy tomato sauce with basil, also pairs perfectly with the smooth taste of burrata. Previously, I made this gnocchi traybake with burrata and vega balls. There the gnocchi gets crispy because it is prepared in the oven. Also definitely worth trying!

What you need:

500 gr gnocchi
3 peppers
1 white onion
2 cloves of garlic
500 ml sieved tomatoes
100 ml of cooking cream
1 tsp oregano
1 tsp dried thyme
1 bulb of burrata
fresh basil
chili flakes to taste
salt and pepper
olive oil

What to do:

Put a pan of salted water on the stove and bring to a boil.

Meanwhile, chop the onion, squeeze the garlic and dice the bell bell pepper. Also finely chop the basil.

Heat some olive oil in a pan and fry the onion in it. After a few minutes, add the bell bell pepper and season with salt and pepper. Fry for a few minutes.

Meanwhile, add the gnocchi to the pan and cook for 2-3 minutes until tender (or follow package directions). Catch a cup of cooking liquid when draining.

Add the garlic, strained tomatoes, cooking cream, oregano, thyme and a pinch of salt and bell pepper to the bell pepper and stir well. Let simmer for a few minutes. Then add the gnocchi with the cooking liquid and simmer for a few minutes until the sauce sticks to the gnocchi.

Serve the gnocchi with the burrata, fresh basil, a pinch of pepper and some chili flakes.
