Creamy cauliflower pasta

This creamy cauliflower pasta is packed with vegetables. The creamy sauce is made from cooked cauliflower mixed with Parmesan cheese (I love salt!) and pepper. To that I add some spinach and sun-dried tomatoes and you have a delicious meal full of flavor including hidden vegetables. Perfect for little ones, too!

What you need:

200 gr pasta of your choice
400 gr cauliflower florets
40 gr Parmesan cheese
+ extra for garnish
100 ml of cooking cream
200 gr spinach
fresh basil
100 gr sun-dried tomato
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and in it cook the cauliflower for 10-15 minutes until soft. Bring another pan of water to a boil and cook the pasta in it according to the package directions. Catch a cup of the cooking liquid as you drain the pasta.

Place the cauliflower along with the Parmesan cheese, cream and a generous pinch of salt and pepper in the blender and blend until smooth.

Heat some olive oil in a pan and fry the spinach in it until shrunken. Cut the sun-dried tomatoes into thin strips and add them together with the cooked pasta, some pasta water and the cauliflower sauce. Season with some salt and pepper and simmer for a few more minutes.

Divide pasta among plates and garnish with additional Parmesan cheese and fresh basil.
