What you need:

1 white onion
1 clove of garlic
200 gr canned tomatoes
(from Mutti)
200 gr colored tomatoes
1 tsp chili flakes
50 ml dry white wine
50 gr black olives
50 gr green olives
1 tbsp capers
2 cod fillets
1/2 lemon
fresh basil
salt and pepper
olive oil

What to do:

Preheat the oven to 180 degrees and grease a baking dish (or use an oven-proof pan in step 2).

Chop the onion and squeeze the clove of garlic. Heat some olive oil in a pan and fry the onion in it. Then add the chili flakes and fry for a while. Then add the tomato sauce, colored tomatoes and garlic. Season with salt and pepper and cook for 10 minutes until the tomatoes soften. Then crush them with a fork into a coarse sauce and mix in the wine, olives and capers.

Now spread the sauce in the oven dish (or leave it in the pan if using an oven-proof pan). Place the cod fillets in the sauce and sprinkle with some salt and pepper. Slide into the oven for 20 minutes.

Remove the baking dish from the oven and garnish with the juice of the lemon and the fresh basil.
