Cauliflower stew with halloumi and roasted paprika sauce

Today we are making cauliflower stew with halloumi and roasted paprika sauce. Part two of the stew series is here! Mashed potatoes don't have to be boring and bland at all. This time we make vegetarian cauliflower stew with halloumi and roasted paprika sauce. A super flavorful combination that is bursting with vegetables. The bitter taste of the cauliflower goes really well with the salty halloumi and sweet paprika sauce. Top it off with some cress for some extra spice! What you need:

750 gr floury potatoes
1 small cauliflower
3 yellow/red bell peppers
200 ml sieved tomatoes
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
dash of (vegetable) milk
200 gr halloumi
bowl of cress
salt and pepper
olive oil

What to do:

Preheat the oven to 220 degrees and line a baking sheet with baking paper.

Bring a large saucepan of water to a boil. Peel the potatoes and cut the cauliflower into florets. Cook the potatoes and cauliflower together for about 15 minutes until soft and tender.

Halve the peppers and remove the seeds. Place them inside down on the baking sheet and drizzle with olive oil, salt and pepper. Massage both sides well and slide into the oven for 15 minutes.

Cut the halloumi into slices. Heat a frying pan and fry the halloumi slices in it on both sides until golden brown.

Remove the roasted peppers from the oven and put them in the blender along with the strained tomatoes, paprika, a generous pinch of salt and pepper and a little cress and blend until smooth. Then pour it into a saucepan and heat on the stove for a few minutes.

Drain the potatoes and cauliflower and return to the pan. Add the milk, garlic powder, onion powder, and a pinch of salt and pepper and mash to make a large stew. It's okay to have some larger pieces in there.

Serve the cauliflower mash with the roasted bell pepper sauce, the halloumi and some extra cress.
