Burrito with minced chicken and avocado dressing

Today we are making this burrito with minced chicken and avocado dressing. During my trip through Mexico, I had a burrito almost every day. Especially on days when we really needed a nutritious lunch or nutritious dinner, we went for a well-filled burrito. The trick to making it extra tasty is to toast it briefly in a piping hot pan. That way it gets nice and crispy and you can enjoy this healthy burrito even more. The burrito I made was filled with yellow rice, minced chicken, carrot, cucumber, bell bell pepper, lettuce and cheese. I topped it off with a delicious avocado dressing. You'll want to try that one! Making your own burritos

Making your own burrito is a fun and tasty way to prepare a quick but nutritious meal. Start with a large, soft tortilla. Add a layer of rice or quinoa for the base. What you need:

1 large whole wheat wrap
40 gr yellow rice
75 gr minced chicken
1 tbsp chicken seasoning or cajun seasoning
1 tsp garlic powder
1/4 cucumber
carrot julienne
a few lettuce leaves
1 tbsp grated cheese
1/2 avocado
2 tbsp (coconut) yogurt
salt and pepper
oil for frying
These supplies are for 1 burrito

What to do:

Bring a pan of water to a boil and cook the yellow rice in it according to the package directions.

Heat a dash of oil in a frying pan and fry the minced chicken in it until loose. Season with the cajun seasoning and a generous pinch of salt and pepper.

Cut the cucumber into strips.

Place the avocado along with the yogurt, 50 ml of water, the garlic powder and a generous pinch of salt and pepper in a food processor or blender. Blend until you have a smooth dressing. Too thick? Add additional water. Too thin? Add some extra yogurt.

In advance, heat a frying pan on the stove. You don't need butter/oil. Spread the wrap with 1 tbsp of the dressing and top it with the lettuce, rice, chicken, cucumber and carrot. Finally, add some grated cheese. Fold the burrito closed and place it in the pan. Flip after 1 minute and repeat until the burrito has turned golden brown and crispy. Serve with the burrito with extra avocado dressing.
